  2. Yellow and white onion are absolutely great in congee. Not asked but I hate raw cutted onion, its seeds and juices get everywhere. The cherry ones though? They slap.

  3. My favorite onion for what? Each dish needs its own (one or two) onions

    Shallot and/or yellow onions for Italian dishes, pearl and/or green for Asian, green and/or purple for salads, yellow and/or purple for sandwiches

    I use more yellow than anything else. But we like them all.

  9. That’s a Sophie’s choice to pick a favorite. But probably yellow because it’s the most versatile if I had to only pick one.

    They’re all on equal footing for me unless I’m in a hurry. Shallots have saved my ass more times than I can count.
